  • Ensure all tandoor dishes are cooked to the correct internal temperature, texture, and smoke flavor profile expected by a fine dining establishment.
  • Plate and present tandoor dishes to the fine dining presentation standards of the restaurant — working closely with the head chef on plating aesthetics.
  • Maintain the tandoor station in a clean, safe, and organized condition — managing coal or gas heat sources safely throughout the shift.
  • Coordinate with the main kitchen team to ensure timely and synchronized food delivery during service periods.
